Installé dans le petit village de Sury-en-Vaux en plein cœur de l'appellation Sancerre , notre domaine compte 11 Ha de vignes, conduit dans sa totalité en agriculture biologique, certifié ECOCERT et biodynamique par DEMETER. Le domaine compte 90 % de son encépagement en Sauvignon blanc et 10 % en Pinot Noir.

Vinification Vendange manuelle. La fermentation est thermo-régulée en cuve bois.

Élevage 8 à 10 mois en cuve bois

Dégustation Nez complexe sur des arômes floraux, fruités et de pulpe d'agrumes. La bouche, pleine dévoile une fine onctuosité, presque charnue, en son milieu le floral permet au vin de gagner en finesse. La finale révèle d'une belle longueur pleine d'éclat. .

Accord Emietté d'araignée de mer, yuzu. Carpaccio de Saint Jacques et cèpes. Crustacés tel que homard et langoustes Volailles fermières, viandes blanches, côte de veau. Fromages de chèvres frais et affinés

What is an author wine?

These can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.
