bonnaL'arôme de cassis revient fréquemment dans les vins rouges et nous l'adorons particulièrement. Ainsi quand on nous a proposé ce nectar, nous fûmes impatient de le goûter, le résultat est à la hauteur de nos espérances. Rien à voir donc avec de la liqueur de cassis, "spécialité" bourguignonne qui sert principalement à maquiller les défauts d'un vin blanc avec ou sans bulles dans un kir.

Un conseil, fuyez les kir comme la peste, le vin blanc utilisé est généralement abominable et imbuvable en l'état. Et si le vin blanc est bon, pourquoi le farder avec de la liqueur de fruit ? Ce Nectar de Cassis prend toutes ses lettres de noblesse en coulis sur un sorbet, un nougat glacé, un fromage blanc ou bien en digestif sur de la glace pilée. Vous en ferez également un apéritif très rafraîchissant en l'additionnant d'eau gazeuse type Perrier avec des glaçons.

Ou bien en se faufilant comme une ombre vers le frigo, ouvrir la porte dudit frigo sans bruit, se verser délicatement une lichette sans glou-glou impromtu et hop derrière la cravate ! Lavez le verre et sortez de la cuisine comme si de rien n'était. Diabétiques s'abstenir. Ce n'est pas un pur jus de cassis (d'où ""nectar"" car un peu de sucre a été rajouté pour éviter tout redémarrage de la fermentation). il puise son originalité oubliée dans les vieux livres de tradition familiale.C'est production artisanale locale peu courante. Le cassis est récolté et élaboré au domaine.

What is an author wine?

This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.

This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author.
