Les raisins utilisés proviennent du célèbre cru de Marienburg. C'était à l'origine une parcelle beaucoup plus petite qui partageait la colline avec d'autres vignobles; malgré le L'unification de ces parcelles due aux réformes agraires de 1971, Clemens, conscient de les différents sols et micro-climats de la colline, vinifieet embouteille ses vins basé sur les noms des parcelles. Les sols de Falkenlay sont des ardoises grises, et les vignes ont entre 70 et 100 ans. Comme son nom l'indique, il y un nid de faucon dans les crevasses de pierre du domaine. Il est bien protégé du vent, et a toujours été considéré prisé par les anciens vignerons du village comme la meilleure section de Puenderich.
VITICULTURE: Biodynamique, ils sont membres de Respekt - un groupe de vignerons qui travaillent en biodynamie - depuis 2015. Clemens a longtemps été un pionnier de l'agriculture biologique viticulture, abandonnant les herbicides dès 1976. Au début des années 80, il a commencé à expérimenter avec des niveaux de soufre faibles , et il a fait des vins sans soufre. Mais il pense que le La combinaison du climat de Riesling et de la Basse-Moselle appelle de petits ajouts de SO2 pour obtenir les meilleurs résultats.
VITICULTURE: Le vin est fermenté spontanément avec des levures indigènes, à basse température dans des très vieux foudres de 1000 litres. Pendant 10 mois, ce vin repose sur ses lies dans de très vieux fûts de chêne avant la mise en bouteille. À part de petites doses de soufre à la mise en bouteille, rien est ajouté aux vins.

What is an author wine?
This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.
An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.
This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author. But that is why we like it! ... That said, author's wines are not systematically marginal: they are present in most of the appellations, and can be part of the elite of these this***. As author's wines are not chaptalized, levied, hacked ... They can have very different profiles depending on the vintage. It is up to us (resellers and consumers) to accept them as they are, and to remain faithful to the producers, because they need us to continue their activity.
