Pale Cream est un Fino pour les personnes qui apprécient les notes oxydatives mais enrobées de douceur. Vieilli pendant 2 ans en chêne américain en solera, il a été ensuite assemblé avec un Pedro Ximenez doux.
Dégustation : La robe est d'un doré intense. Le nez est fin, sur le nougat aux fruits secs et la crème brûlée. La bouche est ronde, ample, enveloppante, déployant une matière douce et fraîche, caressante – vibrante, aussi – d'un équilibre irréel et superlatif. Elle bénéficie également d'une belle allonge, venue d'on ne sait où... La finale est fraîche, énergique, avec de nobles amers tenant lieu de colonne vertébrale, faisant oublier les sucres résiduels, et une persistance sur le miel et les fruits secs.
Parfait à l'apéritif avec du jambon sec, fromages affinés, olives, fruits secs et biscuits.
