Le domaine Wittmann se situe dans la ville de Westhofen dans le sud de la rĂ©gion de Hesse-rhĂ©nane. On a retrouvĂ© des documents qui attestent de la prĂ©sence de la viticulture dĂšs 1663 dans cette ville. Depuis 1990, le domaine est passĂ© dâune agriculture raisonnĂ©e en agriculture biologique et il est maintenant cultivĂ© en biodynamie depuis 2004. Il possĂšde quatre vignobles diffĂ©rents : Aulerde (le plus chaud), Kierchspiel, (un vignoble Ă forte proportion de calcaire qui sâouvre sur le Rhin en forme dâamphithéùtre), Brunnenhauschen (le vignoble le plus Ă©levĂ©) et Morstein. Lâensemble des vignobles se situent sur des coteaux en pente douce. Vendanges manuelles, pressurage dĂ©licat, fermentation en levures indigĂšnes, fermentation et Ă©levage en foudres usĂ©s. Le domaine Wittmann appartient Ă la famille des âmodernistesâ qui prĂ©fĂšrent produire des vins avec un taux dâalcool plus Ă©levĂ© et moins de sucre rĂ©siduel.
La fertile rĂ©gion des collines de Hesse rhĂ©nane avec ses cĂ©lĂšbres vins Maison de Philipp Wittmann. Ici, il dĂ©veloppe doucement une vinification Ă©prouvĂ©e et fait dĂ©jĂ de cette cuvĂ©e 100 HĂŒgel un classique moderne: Ă©lĂ©gant, frais, avec des arĂŽmes de pamplemousse et de pĂȘche.
Ce vin peut se boire seul, pour lui-mĂȘme, ou accompagner des poissons crus relevĂ©s de zeste d'agrumes, ou des plats thaĂŻs (avec ou sans crustacĂ©s). Par contre, il est trop sec pour le tenter sur des fromages affinĂ©s ou des desserts aux fruits exotiques. Il faut mieux pour cela passer aux Kabinett.

What is an author wine?
This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.
An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.
This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author.
