Description of wine 🍷

Cépages : 70 % Grenache / 30% Syrah

Terroir : Sur schiste noire, éboulis argilo-schisteux, dites « les pierres noires » de la Vallée de l’Agly.

Vignes : Grenache : vignes de + 50 ans / Syrah : vignes de +20 ans.

Mode de vinification : Les Grenaches sont vendangées en caisettes et mis en vendange entière dans des cuves tronconiques bois de 17hl et une cuve inox de 35hl / Macération carbonique à froid pendant 15 jours puis les raisins sont foulés pour rendre tous leurs jus / Durant la fermentation alcoolique les cuves sont pigées matin et soir doucement pour maintenir le chapeau de marc immergé / Une fois la fermentation alcoolique terminée, les cuves sont remplies avec de la Syrah.

La Syrah est vendangée à la main, égrappée, foulée, mis en cuve béton / Après une macération pré-fermentaire à froid, fermentation alcoolique avec extraction par remontage / Fermentation alcoolique terminé, elle servira à faire le plein des cuves bois. Les cuves ont été décuvées en mars / Elevage en cuve inox jusqu’à la mise (juin).

Elevage : En cuve bois sous marc pendant 6 mois puis cuve inox pendant 3 mois avant mise en bouteille.

Dégustation : la robe est poupre sombre translucide. Le nez est gourmand, sur le coulis de mûre / framboise, avec une légère touche yaourtée et une pointe d'épices. La bouche est ronde, très ample, enveloppante, déployant une matière dense et charnue au toucher velouté, avec des tannins concentrés mais remarquablement fondus. Le fruit est "bombesque" et la fraîcheur communicative. On se demande où se planquent les 15.5 % d'alcool ? Peut-être dans une finale puissante, intense, séveuse, à la mâche savoureuse, avec un fruit un peu plus riche et confit, et des notes épicées persistantes.

What is an author wine?

This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.

This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author. But that is why we like it! ... That said, author's wines are not systematically marginal: they are present in most of the appellations, and can be part of the elite of these this***. Because they are not content to have personality: they are good, in addition! With in general aDegree of TorchabilityVery high: we never tire of it at the end of the first sip.

As author's wines are not chaptalized, levied, hacked ... They can have very different profiles depending on the vintage. It is up to us (resellers and consumers) to accept them as they are, and to remain faithful to the producers, because they need us to continue their activity.
