Herdade do Cebolal

Herdade Do Cebolal is the southernmost domain of the Península de Setúbal region. Located 170km south of Lisbon, the vineyard is extremely close to the Atlantic Ocean. Fresh winds from the ocean bring freshness and allow the grapes to ripen slowly while keeping a good acidity. The soil is very varied, limestone, clay, alluvial earth, 4 different types of shales, chalk ...

Herdade Do Cebolal was created by the grandfather of Luís Mota Capitão 150 years ago. Luís represents the 5th generation of the same family at the head of the estate.

Herdade Do Cebolal practices organic farming (unkinded), they use different very interesting methods in order to improve the life of the soils. They notably use ocean algae as compost but also sheep to cut the grass naturally.
To limit the effects of global warming, the field is part of an agroforestry approach. The trees provide shadow in the vines and hold rainwater in the ground. They also have bees on the farm, so it is all the more important not to use chemicals.
The Vendages are carried out by hand and the wines are fermented in native yeasts.

What does the name organize mean?

This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.
