Cépage : 50% merlot – 20% Cabernet sauvignon – 20% Malbec – 10% Syrah
Terroir : merlot et cabernet sauvignon sont issus de vignes âgées d'une trentaine d'années, enracinées dans un sol argilo-graveleux sur sous-sol de mélasse brunes grises. Les Malbec et Syrah proviennent d'une parcelle un peu plus jeune également argilo graveuleuse mais sur un sous-sol de marne bleue. Viticulture certifiée BIO
Vendanges : Manuelles, essais à la vigne et sur table de tri au chai
Vinification : Egrappage à 100%, cuves bétons ouvertes, pigeages légers, macération de 2 à 3 semaines avec des extractions très douces. Chaque cépage est vinifié séparément.
Levures indigènes
Elevage : en pièces pendant 24 mois. Chaque cépage est élevé séparément. Mise en masse pendant 6 mois avant mise en bouteille
Mise en bouteille : sans collage ni filtration,
Profil du vin : vin structuré (malbec, merlot) et complexe avec des arômes épicés (syrah) et frais (cabernet sauvignon). Une vinification douce et respectueuse du fruit, suivie d'un élevage long (24 mois) en fûts de plusieurs vins permettent d'obtenir un vin aux tanins fins et soyeux. Le terroir argilo-graveleux apporte de la rondeur aux tanins et Chante Coucou se marie bien avec des mets en sauce. Chante Coucou est un vin de garde, s'il est bu jeune il est parfois bon de le carafer pour l'aider à s'ouvrir et à s'exprimer. 2009 est un millésime ouvert qui explose dès sa jeunesse mais avec un très bon potentiel de vieillissement.


What is an author wine?

An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.

This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author. But that is why we like it! ... That said, author's wines are not systematically marginal: they are present in most of the appellations, and can be part of the elite of these this***. As author's wines are not chaptalized, levied, hacked ... They can have very different profiles depending on the vintage. It is up to us (resellers and consumers) to accept them as they are, and to remain faithful to the producers, because they need us to continue their activity.
