Cuve ouverte avec macération pré-fermentaire pendant 24 h. Fermentation à froid contrôlé pendant 10 jours. Arrêt de la fermentation par addition d'alcool de vin 96% pour arriver à un vin à 17 °
VIEILLISSEMENT
En fûts de chêne américain et français. Ce vin a vieilli en foudre dans la cave historique de Blandy dans le centre de Funchal. Pendant les 5 premières années, le vin a été divisée en deux fûts de 650 l dans les étages supérieurs, sous les toits, plus chaud et plus sec.

SERVIR ET CONSERVER La récolte de 1998 Sercial pas besoin de décantation. Il a été mis en bouteille prête à boire et à maintenir leurs caractéristiques pendant plusieurs mois après ouverture. C'est meilleur lorsqu'il est servi légèrement frais (14 º C) à l'apéritif mais il est aussi très bon avec des soupes crémeuses, des poissons et des sushis.

NOTES DE DEGUSTATION : Robe dorée / orangée. Nez évoquant le cake au beurre, avec une grande fraîcheur phénolique qui vous saisit. La bouche déroule une matière douce, ample, soyeuse, tendue par une fine acidité. L'intense finale peut surprendre par sa sécheresse, avec des notes de zeste de pamplemousse et de raisin de Corynthe, .

What is an author wine?

This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible.
