Notre vignoble se situe au sein du village de Colombé-la-Fosse, au sud-est de la Champagne, là où la nature offre une terre et un ensoleillement particulièrement généreux. Il est composé de 7,5 hectares plantés en Chardonnay et en Pinot-Noir sur 4 communes du Barsuraubois. Les conditions climatiques ainsi que notre sol argilo-calcaire nous offrent un cépage léger. C’est cette légèreté qui apporte de la finesse, de la puissance et de la fraîcheur à notre Champagne.

VITICULTURE Rendement limité sur un vignoble de 20 ans d’âge moyen. Viticulture raisonnée.

VINIFICATION Vendange manuelle. Jus de première presse uniquement. Débourbage naturel. Fermentations alcoolique et malolactique en cuves inox.

ASSEMBLAGE Champagne d’assemblage par excellence. Il allie la finesse du Chardonnay avec la puissance du Pinot Noir.

Composition : 60 % de Chardonnay et 40 % de Pinot Noir.

VIEILLISSEMENT Dans les caves de la propriété, à température constante de 12°C.
Dégorgement de deux à quatre mois avant commercialisation.

DEGUSTATION La robe est or clair, avec de nombreuses bulles éparses. Le nez est frais, sur le citron et le pomelo, complexifié par des notes de fruits secs, de viennoiserie chaude et de pomme rôtie. La bouche est vive, tendue par une acidité traçante qui se prolonge au-delà-même de la finale, offrant une matière fraiche, éclatante, aux micro-bulles frétillante, avec une aromatique sobre sur les fruits blancs mûrs, la framboise et les amers de l'écorce de pomelo. La finale est intense, méritant la note Triple A+++, avec l'Acidité décoiffante qui poursuit son chemin, la noble Amertume de l'écorce d'agrume et du quinquina, et l'Astringence de la craie et de la pulpe de citron qui perdure longuement.

ACCORDS METS ET VINS Ce Champagne accompagnera merveilleusement les poissons
ainsi que les fruits de mer. Idéal pour sublimer la cuisine

What is an author wine?

This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.

This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author. But that is why we like it! ... That said, author's wines are not systematically marginal: they are present in most of the appellations, and can be part of the elite of these this***. As author's wines are not chaptalized, levied, hacked ... They can have very different profiles depending on the vintage. It is up to us (resellers and consumers) to accept them as they are, and to remain faithful to the producers, because they need us to continue their activity.
