Mil Gracias ou "Mille Merci", c'est notre façon de faire l'éloge du potentiel et les propriétés de ce super cépage indigènes de la Navarre / Rioja, utilisé normalement pour les assemblages ou simplement ignorés dans le passé. Graciano, cher raisin, tu sais quoi? Nous t'aimons !


Cépage : Graciano 100% de la Finca la Pedrera

Vinification : notre vignoble de Graciano est le dernier à avoir été récolté. Le moût de raisin macère à froid avec les peaux avant fermentation, qui se déroule également à froid. Après la fermentation, le vin vieillit pendant 9 mois en fûts de chêne américain et français de 225 litres, suivi d'un vieillissement en bouteille supplémentaire d'au moins 24 mois. Le vin n'est pas élaboré chaque année en raison des caractéristiques difficiles de culture du raisin de Graciano.

Dégustation : A l'oeil: couleur pourpre profond. Au nez: baies noires, cassis, prunes noires, poivre blanc, vanille, chocolat noir en vieillissant, En bouche montre une grande concentration de saveur, des tanins fermes, un excellent équilibre d'alcool et acidité, avec une belle intensité de saveur et longue finale, avec prédominance notes de fruits noirs, d'épices et de notes balsamiques.

Acoords : Ragoût de joues de porc, agneau rôti, merci d'avoir inventé la dinde ! Je suis votre vin du repas en famille du dimanche, celui dont vous n'avez probablement pas entendu parler mais que vous n'oublierez pas.

What is an author wine?

This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.

This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author.
