Si la latinité était un vin, ce serait assurément Belle de nuit. Une cuvée sensuelle, généreuse, charnelle qui fait mine de s’offrir au premier regard, au premier nez…Pourtant, avec elle, soyez patient : sous sa robe rouge sang se cachent tous les tendres secrets des nuits andalouses, une feria d’arômes épicés, la douceur et la violence intimement mêlées. Oui, soyez patient, et, dans 5 ans, 10 ans, c’est une gitane de rêve que vous verrez danser sous la lune sévillane.

Ce caractère de feu, Belle de nuit le doit à l’alliance du bouillonnant grenache - qui la compose à 100% - et de la fraîcheur d’un terroir d’altitude accroché aux pentes de la Montagne noire, un terroir torturé par l’érosion, jonglant entre silex, marnes calcaires et argiles siliceuses. Comme il se doit, la vendange est manuelle, la cuvaison longue, tandis que l’élevage - 18 mois - est conduit en cuve et en bouteilles afin de ne surtout pas masquer, avec du bois, la finesse de ce vin d’initiés.

Température de service :16° C..

Garde : délicieux sur le fruit après 2 à 3 ans,

Belle de nuit peut se conserver 10 ans, voire plus certaines années.

Accords : jeune, Belle de nuit ne craint pas de se frotter à des plats relevés, pourquoi pas à une daube de toro ou une paella. Quand arrive l’âge mûr, il est temps d’envisager de lui présenter des plats de haut vol, telles des grives à la ventrêche ou des brochettes d’alouettes.

What is an author wine?

This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.

This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author. But that is why we like it! ... That said, author's wines are not systematically marginal: they are present in most of the appellations, and can be part of the elite of these this***.
