La référence historique du Château Ollieux Romanis. Si la Cuvée Classique fait office de référence en Languedoc c'est parce qu'elle a cassé les codes historiques du profil d'un vin des Corbières. Déjà dissidente dans sa nature, elle a porté son appellation sur des traits de personnalité jamais vus jusqu'ici.

Cépages 45% Carignan, 25% Mourvèdre, 20% Syrah et 10% Grenache

Climat Des vents forts et de belles influences maritimes caractérisent ces parcelles. Leurs carignans profitent des rosées matinales pour se gorger d'eau par les feuilles. Une belle exposition les éclaire et l'enveloppe d'une chaleur compensée par l'humidité apportée par la mer. Ici tout est une question d'équilibre

Terroir Rouge Méditérranéen, Poudingue sur grès (mélange de galets roulés et de calcaire).

ge des vignes La Cuvée Prestige Ollieux Romanis provient de parcelles sélectionnées âgées de 40 à 100 ans. Elles sont plantées avec une densité de 3500 pieds/ha pour un rendement de 35 hl/ha.

Élaboration En levures indigènes pour les Syrah et les Mourvèdres, traditionnelle pour les autres cépages. Cuvaison de 12 à 18 jours. Carignans vinifiés en macération carbonique. La Cuvée Prestige Rouge est élevée à 50% entre 6 et 12 mois en fûts de 1 à 5 vins et à 50% en cuve inox, vin conservé à 15°C.

What is an author wine?

This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.

This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author. But that is why we like it! ... That said, author's wines are not systematically marginal: they are present in most of the appellations, and can be part of the elite of these this***.
