Features

Terroir : Reculée du val de Vallière, coteau face à Montaigu, exposition sud Marnes bleues noires argilo-calcaires en ardoises issues du lias.

Travail de la vigne : vignoble en bio dynamie, contrôle et certification Demeter depuis 2003 : utilisation de bouse de corne, silice et traitements à base de tisanes de plantes. Cette culture permet de garder les levures indigènes favorisant authenticité et pureté des vins. Vendanges exclusivement manuelles avec tri des plus belles grappes à la vigne et transport rapide en petites cagettes pour ne pas blesser les raisins et utiliser ainsi peu de S02 au cours de la vinification.

Cépage et rendement : Issu d’un assemble de 30% Chardonnay, 40% Savagnin et 30% Poulsard. 100kgs de raisins séchées donneront environ 15L de jus.

Vinification : Raisins passerillés à savoir séchés sur des claies ou suspendus au plafond tout l’hiver. Pressurage en mars et fermentation très longue de 8 à 10mois et vieillissement en pièces de chêne avec ouillage régulier. Pas de levurage, pas de chaptalisation, ni aucun additifs œnologiques. Pas de filtration et très peu de S02 à la mis en bouteille effectuée selon le calendrier lunaire (jour fruit) et bouchage avec du liège naturel marqué au feu.

DEGUSTATION Robe ambrée à nuances orangée. Bouquet profond avec des notes d’écorce d’orange confite et de pâte de coing et une touche finement miellée. Bouche équilibrée pleine et suave exprimant des saveurs de fruits séchés, avec une touche de fleur de tilleul.

ACCORD METS ET VIN Servir frais en apéritif ou comme vin de dessert avec chocolat noir. Accompagne avec délicatesse foie gras et plats sucré-salé. Garde : 50 ans

What is an author wine?

This can be so diverse depending on the personality of their sire, that it is easier to define what it is not. An author wine is anything but a standard, stereotypical wine, made to please as many people as possible. It is therefore rarely produced in millions of copies, copying itself from vintage in vintage.

An author wine is therefore a wine that does not look like that of the neighbor. Which from year to year will evolve according to the vagaries of the weather and the mood of the author - the two that can be linked. Because the author does not rely on market studies to carry out his boat. He makes his wine as he feels, as he likes, as he can, sometimes ... and too bad if he does not please everyone.

This is why author wines are sometimes classified as "table wine" or "France wine". Because the winemaker did not plan the authorized grape variety*, makes the assembly or vinification recommended in the name **. He is often a bit rebellious, our author. But that is why we like it! ... That said, author's wines are not systematically marginal: they are present in most of the appellations, and can be part of the elite of these this***. Because they are not content to have personality: they are good, in addition! With in general aDegree of TorchabilityVery high: we never tire of it at the end of the first sip.

As author's wines are not chaptalized, levied, hacked ... They can have very different profiles depending on the vintage. It is up to us (resellers and consumers) to accept them as they are, and to remain faithful to the producers, because they need us to continue their activity.
